Blueberry Pie Recipe


  • 1 pie crust (store-bought or homemade)
  • 4 cups blueberries
  • 3/4 cup sugar
  • 3 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter
  • 1 egg, beaten (for egg wash)


  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the blueberries, sugar, cornstarch, lemon juice, vanilla extract, and salt.
  3. Pour the blueberry mixture into the pie crust and dot the top with small pieces of butter.
  4. Roll out the second pie crust and cut it into strips to create a lattice top. Place the lattice strips on top of the blueberry mixture.
  5. Brush the beaten egg over the lattice strips to give the pie a golden color.
  6. Bake the pie for 50-60 minutes, or until the crust is golden brown and the filling is bubbly.
  7. Allow the pie to cool for at least 30 minutes before serving.
